What a treat when at a recent conference in San Francisco, Ethan Mantle of Componere Fine Catering treated our group of wedding planners to an ice cream cone created by the use of liquid nitrogen to chill the cream mixture instantly onsite.


Not something for an inexperienced caterer to play with, but this ice cream station can be a showy spectacle for your guests to watch and enjoy.
